Happy Friday Friends!!
What are your plans for the weekend? We’ve been invited to brunch at a lovely friends house on Sunday so I’ll be busy baking Saturday afternoon to take over something nice. Haven’t decided yet what I will make but any excuse to bake is a good excuse for me. I love Fridays because everyone is happy it’s almost the weekend. Lots of happy faces everywhere! Love it.
So, I have to say ever since experiencing the flavours of Belgian Strawberries in Spring time I don’t know how I’ll ever find such a pure and aromatic flavour anywhere else! I’ve been spoiled and I feel like there’s no turning back. I tell you. They’re amazing. The flavour of Belgian strawberries are 20 times tastier, sweetie and when you bring a couple of punnets home it fills your kitchen with a sweet fragrance like no other. If you ever visit Belgium in Spring or Summer BUY a punnet of strawberries and you will see what I mean.
As I mentioned in my Lemon Lime & Mint Lemonade post last week I’m trying to make the most out of the last of the beautiful Summer days and the delicious Summer fruits.
I recently went to my local farmers markets (I’m fortunate enough to have them about a ten minutes walk from my house and three times a week!) and I purchased a couple of large punnets of strawberries. Now that Summer is coming to an end they don’t seem to taste as amazing but they’re still delicious. I have been wanting to make strawberry jam for ages and finally got around to making some. I didn’t want to make a traditional strawberry jam with lots of sugar. I wanted something lighter and much healthier. Something I could give to my boys without much sugar.
Chia seeds are a pretty big thing and an amazing super food. They have so many benefits like high in protein, low in calories, high in fibre, high with antioxidants and are high in Omega 3 fatty acids just to name a few. Who am I to ague against the power of these tiny little black seeds? I decided to make a Strawberry And Chia Seed Jam because I wanted not only something yummy but something healthy! This recipe is light, not too sweet and is preservative free.
- <span class=”mceItemHidden” data-mce-bogus=”1″><span></span>250g Fresh Strawberries</span>
- 2 tbsp Chia Seeds
- 1 tbsp Raw Organic Honey
- 2-3 tbsp water
- Place strawberries, honey and water in a small saucepan and cook on low for 15-20 minutes or until soft and dissolved.
- Add chia seeds, mix and simmer for another 10 minutes on low.
- Remove off heat, let it cool.
- Once cool, add to an airtight container and keep in your fridge.
I’ve been making this recipe regularly and still haven’t gotten bored of it. I love I can make a quick batch while I prepare dinner and the best thing is the kids love it!

Look at you go, you clever little thing!!! I need to make jam! It seems like such a lovely thing to do – make your own jam and then pop it onto some freshly baked bread or scones. Delicious!
Haha. I’m trying to make myself all domestic and stuff but really I’m not 😛 Once in a while I like to make things that are not the usual stuff I cook which is pretty boring. I loved making Jam! I love how easy it is. Yum, fresh bread. I’m lucky, so many bakeries with fresh bread everywhere I go! 🙂
I recently read an article about freezing fruit from the summer to keep it for eating later, but this jam looks like another great way to use up the strawberries that are on sale right now!
That’s a really good idea. may stock up on strawberries while they are still around! Great tip!
