The weather has been fabulous lately. I’m talking gorgeous summer days that aren’t too hot with a beautiful breeze that helps to keep you perfectly cool. Ryan and I recently purchased a small outdoor setting so we can enjoy the beautiful weather once the boys are down for the night. We usually have a wine or beer, cup of tea or water but I recently remembered I had this delicious recipe stored away and had to get on to making it. I tell you, it’s a delicious fizzy citrus hit and it leaves you feeling so refreshed. I love this drink. You could probably also turn it into a cocktail. Chuck some Vodka in there and voila. Best part about this Lemon Lime and Mint Lemonade is that it’s low-calorie. Winning! Ha!

I purchased this mint plant at my local markets and can you believe I’m struggling to keep it alive! My name in this house is called “The plant killer”… Cause that’s what I do. I don’t meant to. I wish it didn’t happen. I try and follow the instructions but thus far no plant has ever survived over a month with me except my lavender and that’s only because I planted outside my kitchen window…. I’m sure it will die eventually but the lady who owns the plant stall at the markets told me lavender is very resilient against plant killers like myself! Haha. So far she is right.

I’m enjoying so many delicious summer drinks while I can and before the weather changes. I do look forward to warm winter drinks also but I’m a hot chocolate or chai latte kinda gal which is not very good for the old body weight. I’m going to have to figure out how to get my hot chocolate fix in a low-calorie sort of way. That’s what I’m aiming for lately. Low calorie. Drinks can have so much sugar in them if you’re not careful and I’m trying to cut back as much as I can at the moment. All this gorgeous Belgian food is killing me and I’ve got to get my act together or I’ll end up the size of a planet.
- 500ml Diet Lemonade (cold)
- 2 Limes, cut into wedges
- 2 Lemons, cit into wedges
- 1 TBSP Brown Sugar
- ¼ Cup Mint leaves
- 3-4 Cups crushed Ice (optional)
- Squeeze the juice from both the limes and lemons into your jug of choice.
- Using a mortar and pestle lightly crush mint leaves and sugar with a little bit of the citrus. Add it to the jug.
- Add ice and lemonade. Stir and serve straight away.

Can’t believe another week is pretty much gone. What are your plans for the weekend? I think we will continue to explore this beautiful country specially while the weather is nice and I will try to get some more DIY’s done for the house. Oh and of course an Ikea trip is much needed!
